Senior Chef Salary 38 hours Minimum per Week Adelaide Rockford Hotel, a small unique Accor hotel in Adelaide's CBD, is looking for a senior chef to help bolster a small unique team creating wonderful food for our guests.
Flexible days of the week to work although must be available at least on Saturday nights.
The ideal candidate must have Hospitality Certification, understand HACCP and WH&S in respect to kitchens, be able to organise rosters and handle food ordering.
The role is mostly for late afternoon starts for dinner and/or function meals; however, there can be shifts for breakfast for hotel guests.
As Adelaide Rockford is a small hotel, you must be able to work autonomously.
This is a hands-on role.
Tasks include:
Planning menus, estimating food and labour costs, and ordering food supplies.
Monitoring quality of dishes at all stages of preparation and presentation.
Discussing food preparation issues with Managers, Dietitians, and kitchen and waiting staff.
Demonstrating techniques and advising on cooking procedures.
Preparing and cooking food.
Explaining and enforcing hygiene regulations.
May select and train staff.
May freeze and preserve foods.
Preparing both hot and cold items for breakfast and dinner.
Cooking breakfast and dinner for in-house guests and conference/function delegates.
Collection and storage of kitchen food in a safe and hygienic manner.
Preparing food for dinner menu as required and directed by the Head Chef.
Cleaning all crockery, cutlery, glassware, and kitchenware.
Responsible for cleaning kitchen in a safe and hygienic manner according to HACCP requirements.
Temperature checking and control of food items in line with HACCP.
Skills include knife handling, cutting, pan fry and char-grilling of food, organizing food preparation and cooking for corporate meetings including lunches, setting up platters of an arrangement of food including morning and afternoon teas, knowledge of operating kitchen equipment safely, preparing food ready for main meal cooking, plating in a presentable manner, clear communicator with other kitchen cooks and chefs and with the service team, completed food safety course, has completed Associate III.
A minimum of 2 years in a similar level role is required.
