Detailed knowledge and experience mixing both sourdough and yeasted doughs using spiral and oblique mixers.
Good touch, dough handling and shaping skills and a solid understanding of fermentation, proofing and recognising dough condition.
Experience scoring and loading hearth loaves and baguettes.
Excellent leadership skills, the ability to delegate effectively and drive the shift forward.
Recognises the importance of and implements mise en place, clean as you go and safe working practices.
Committed to excellence, continuous improvement, and attention to detail.

We are looking for a Senior Baker keen to primarily work our morning shift.
Approx.
2am start according to position and production demands.
