About the role As the Venue Manager, you will assume full responsibility of our F&B operations including the restaurant, bar, conferencing, in-room dining, and gaming. The role offers you a great opportunity to demonstrate your leadership skills and your passion for providing excellent service. This role is pivotal in providing great products and service at Rydges Mackay Suites.
You will have demonstrated experience in leading teams in high performing Food, Beverage & Gaming operations, and have sound knowledge of relevant legislative requirements including HIGA & OLGR. Supervise and mentor staff members to deliver outstanding service and foster a positive work environment, promoting teamwork and excellence. Collaborate with the Head / Sous chef in curating menus and maintain high-quality standards. Ensure compliance with health and safety regulations and uphold cleanliness standards. Monitor and maintain quality control in all aspects of food and beverage operations. Takes ownership of guest complaints and resolve all issues promptly and professionally. Be responsible for the P&Ls of the F&B department - ensuring KPIs are met, managing payroll and COGS within budget as well as preparing forecasted revenue for food & beverage outlets. Monitor industry trends and competitor activities to identify opportunities for innovation and improvement. Deliver revenue maximisation strategies including executing on promotions, menu engineering, and increasing customer retention/average spend.
