Position Requirements: Be a driver in all aspects of food preparation and follow our ethos of minimal to zero food wastage.Keep abreast with changes and developments introduced by Danny and Adrian in the selection, production and presentation of the menu and be ready to contribute with your own creative ideas and flair!Have the experience to manage and lead the team through very busy breakfast, lunch and dinner services without compromising on quality.Manage HACCP and ensure the highest hygiene and safety standards are maintained at all times.Display a high degree of flexibility in acceding to "off the menu" guest requests. Offering comparable alternatives where guest's original request cannot be delivered to their expectations.Remain calm, confident, and have a hands-on approach especially during busy periods.Provide regular feedback, coaching, support and guidance to the team in order to create a positive environment and achieve 'excellence' and 'engagement' within the team.Manage the ordering and have an understanding of the P&L and how to manage costs.Assist with completing rosters and manage the payroll and productivity to reflect operating forecasts and budgets.Ensure a positive relationship is maintained between all departments. You will possess: The ability to curate memorable experiences for our guests through the quality of your food.Minimum 2-3 years' experience as a Sous or Head chef in a busy, top end restaurant or hotel.Strong leadership skills and ability to mentor and develop team.Professional verbal communication skills and strong eye for detail.Impeccable hygiene, grooming and presentation.Strong work ethic and flexibility to work over 7 days a week, rotating roster including weekends & public holidays.Superior organizational, time management and follow-through skills.An absolute passion for all things food and beverage!
