We are looking for a motivated and enthusiastic Pastry Chef to join our busy national bakery. The ideal candidate will have a strong background in large multi-function high end venues and experience producing consistent, high quality culinary items.
What does a typical day look like?
As one of our Pastry Chefs, you will be working in a busy, open plan kitchen preparing & cooking various international hot & cold meals for our customer airlines. This will also involve supervising other kitchen staff including Catering Attendants and labour hire team members.
The successful candidate will be responsible for: Maintaining a kitchen environment that promises flair, creativity, and consistency in the quality of menu items with taste and appearance. Being multi-skilled and leading teams in all areas of food production dependent on daily requirements. Ensuring correct stock rotation is adhered to, ensuring minimal/no product wastage. Prioritizing and managing workload to meet cold soak requirements and pickup times. The preparation of complex and exotic dishes to specification. Providing feedback regarding shortfalls in production process to improve process and exceed customer service expectations. Supervising and training kitchen staff as required. Performing general and specialized duties. Performing activities working to passenger load requirements and current customer specifications. Participating in customer menu development and presentation. Complying with hygiene, safety, quality, customer service, right first time and performance standards. Complying with all dnata Food Safety requirements including Personal Hygiene, Good Manufacturing Practice (GMP), Food Handling and Storage Requirements. Complying with Customer and Legislative HACCP requirements. What do you need to be successful in securing this role? Demonstrated success in a similar role. Trade qualified Chef with at least 3 years' experience in a high volume food production environment. Previous experience in a commercial kitchen environment preferred but not essential. Advanced knowledge of HACCP / QSAI / Food Safety and OHS. Prior experience in a HALAL working environment and knowledge regarding segregation and separation of equipment. Strong communication and organisational skills. Ability to work across a 7-day rotating roster. As you will be working in the Aviation Services industry, you will be required to obtain a clear National Police Check. What's in it for you?
