Our very own Galleons Bistro is fully licensed and located onsite for resort guests, open for breakfast, lunch, and dinner.What you will do:You will work closely with our Resort Manager and Food and Beverage Manager to ensure our guests receive good, honest food - the opportunities are endless!Lead a kitchen team with clarity, direction, enthusiasm, and a hands-on approachEnsure all aspects of food preparation, cooking, and presenting of dishes according to company guidelines and customer preferencesEffective management of the department rosterEffective management of waste, portion sizing, and menu preference offeringsOrdering of food products to ensure consistent menu availabilityCost analysis and menu planning to ensure the resort food cost & KPI's are achievedLook to source local and cook freshLiaise with food service and restaurant management regarding customers' orders and general service of kitchen operationsMaintain a safe and hygienic working environment, including proper storage of food, equipment, utensils, and implementsEnsure daily temperature checks of fridges, freezers, storage areas, deliveries, and recording assessment where necessaryWhat you will bring:A formal qualification in commercial cookery would be an advantagePrevious experience in a Lead or Head position in a restaurant, club kitchen, resort, or bistroLeadership experience in supervising other cooks and kitchen employeesA working understanding of 'Food Safety' principles and workplace health and safetyExperience in ordering and stock controlEffective verbal communication skillsWillingness to be part of a greater team and jump in to assist the team and lead from the frontWhat's in it for you?At Parks & Resorts, we are not just about discounts (although you do get these too).
