About the role
Brisbane Private Hospital is seeking a culinary leader to manage a team of 30 associates (both FSA'S and Chefs and Cooks) to ensure both our patients and our VMO'S expectations are exceeded. We are a very busy operation and require a leader who leads by example, runs a section and is not office bound, who loves creating fresh amazing food for 180 patients, 100 VMO'S and 700 staff daily. The life is balanced, Monday to Friday with a negotiable hourly rate.
As a leader, we seek someone who is about developing relationships with all managers, their teams, and delivering a cook fresh product, soon to be room service and a busy array of functions and upscale catering. Your knowledge of rostering, lateral thinking, and most importantly "Food safety" is paramount to leading this very busy operation. You are supported by a team leader in Food services and a very proactive Executive leadership team.

Set at the top of Wickham Terrace, Brisbane's busiest medical precinct, above the Roma Street Parklands in the heart of the CBD, Brisbane Private Hospital is an acute and rehabilitation hospital with 181 beds, 17 operating theatres and dedicated surgical, ICU and rehabilitation wards. Brisbane Private Hospital specialises in Neurosurgery, Orthopaedics, Spinal, ENT, Pain and Rehabilitation with additional specialties including Plastics, Urology, General Surgery, Gynaecology and Oral and Maxillofacial Surgery. Brisbane Private Hospital also delivers a leading private drug and alcohol program, Damascus Health Services, from its dedicated drug and alcohol rehabilitation unit.
As a Head Chef your responsibilities will include: Maintain cleanliness and hygiene levels of food preparation area and kitchen equipment Meal and food preparation for patients as per recipe guide Stock control and ordering for food supplies Maintain regular daily temperatures of refrigerators and freezers as per food safety standards Implement and monitor Food Safety Program Sound knowledge of dietary and nutrition requirements Demonstrated understanding of accreditation standards, WH&S management and function coordinating Lead team members to deliver excellent customer service to patients and staff Provide management and guidance to the kitchen staff, ensuring a smooth operation Kitchen and food cost management within budget Liaise with management Work in unison with Food Service Manager on future projects including new Menus Labour and rostering Essential Criteria: Minimum Certificate III in Commercial Cooking or equivalent, Certificate IV preferable Minimum certificate level qualifications in management Food Safety Supervisor Certificate Certificate in Safe Food Handling Good working knowledge and understanding of HACCP regulations Knowledge of IDSIS Framework Good communication and time management skills Experience in executing all aspects of kitchen operations and food preparation in a hospital or similar catering environment Pride in personal appearance and hygiene Why Healthscope?
