JRM is working with a well-known and respected hospitality group to find a Head Chef for one of their Brisbane locations in Fortitude Valley. Very popular locals' favorite, multi-level venue offering varied event spaces, private dining rooms, and casual dining.
The venue has 3 kitchens: 1 main kitchen, a prep kitchen, and a satellite kitchen used mostly for sending functions and events.
There's a solid team in place, plenty of support from management, and the group is renowned for having a great company culture.
Salary is up to $110k + super and for high-performing candidates, a discretionary pay review based on performance.
To be successful in the role you will have: Excellent time management and organisational skills; the outlet has multiple areas and these skills are essential to succeed. A solid understanding of current high-volume and gastro pub food trends and a creative flair for thinking outside the box. Previous experience in a similar role and sized venue with success in managing a medium-sized team of approx 10 chefs. Experience in managing food and labour costs, proficient in managing an efficient roster with evolving and changing business requirements. About the role: Manage a team of 8-10 chefs in a multi-outlet and multi-level kitchen. Work with the Executive Chef on menu development. Bring your creative input and collaborate on special occasion menus. Stay on top of COG's and keep in line with the company directive. Manage daily ordering, liaising with suppliers and conducting regular stocktakes. Lead the team from the front, train and mentor at all levels, and encourage a collaborative culture between all departments.
