Food Technologist – Patisserie (Chemistry Focus)
Location: Sydney, NSW
Position Type: Full-Time

We are seeking a skilled Food Technologist with a strong chemistry background to lead product development and ensure that our creations meet the highest quality and food safety standards.
Key Responsibilities: Chemical Analysis and Testing: Conduct chemical and microbiological analysis on ingredients and finished products to ensure quality, consistency, and compliance with food safety regulations (e.g., pH levels, moisture content, fat analysis). Regularly evaluate the chemical composition of new and existing ingredients to optimize product formulas. Product Development: Lead the development of new baked goods and desserts, focusing on the interaction of chemical compounds to enhance flavor, texture, and shelf life. Collaborate with production teams to create innovative recipes that balance taste and safety. Quality Control & Assurance: Oversee food safety and quality control measures in line with HACCP and FSANZ standards. Implement rigorous testing protocols to ensure that products are free from contaminants and meet all regulatory requirements. Ingredient Sourcing & Compliance: Evaluate new ingredients and conduct in-depth chemical analysis to verify compliance with our standards for safety and sustainability. Ensure all materials meet legal requirements and maintain documentation for traceability. Process Optimization: Use chemical principles to optimize baking and production processes, improving efficiency while maintaining the handcrafted quality of our products. Reporting and Documentation: Maintain comprehensive records of chemical tests, recipes, and production procedures. Report findings to management and suggest improvements based on scientific data. Qualifications: Bachelor's degree or Master's in Chemistry, Food Science, or related discipline (essential). 2+ years of experience in a similar role, with a focus on chemical analysis within the food industry. Strong background in analytical chemistry techniques relevant to food safety, such as titrations, spectrophotometry, and chromatography. Familiarity with food safety regulations, quality assurance practices, and chemical safety standards. Experience in product development, particularly within the patisserie, bakery, or confectionery sectors. Skills & Attributes: Ability to conduct chemical analyses and interpret scientific data for practical applications in food production. Strong problem-solving skills, with attention to detail and a focus on innovation. Ability to manage multiple projects from research through to product launch. Excellent communication and collaboration skills, working closely with production and management teams.
