Our MECC & Events department plays a crucial role in ensuring high-quality dining experiences for employees, visitors, and special events. We are seeking a talented and experienced Executive Sous Chef to join our team and help elevate our culinary offerings on a permanent full-time basis, ensuring the day-to-day function of the kitchen operation for the MECC, Foodspace and BB Print Stadium.
About this opportunity:
Assisting the Executive Chef in managing daily kitchen operations, overseeing food preparation, presentation, and service to ensure excellence and consistency. Develop and execute menus, incorporating seasonal and locally sourced ingredients. Supervise and train kitchen staff, maintain high standards of cleanliness and safety, manage inventory, and collaborate with other departments for special events. Contribute to the continuous improvement of kitchen processes and food quality.
Essential Qualifications, Experience & Skills:
Certificate III in Commercial Cookery
Responsible Service of Alcohol (RSA) training and Certificate.
QLD "C" Class Drivers Licence or interstate equivalent. Note: interstate licences must be transferred to QLD within three (3) months of commencement.
First Aid certificate or ability to obtain.
Chief Warden or Building Warden Accreditation or ability to obtain.
Proven ability to lead and mentor staff in food and beverage preparation and service, manage functions and events, and maintain effective cost control.
Experience in electronic software such as EBMS, Cooking the Books will be highly regarded.

Total Remuneration Package $88,723 – $92,787+ allowances as applicable (level offered will be dependent on successful candidates' qualification and experience)
