The Position: Maintain all catering standards by building and managing a small team dedicated to excellent customer service. Safeguard OH&S compliance and HACCP. Champion a strong focus on sustainability and a passion for waste reduction. Forecast food and labour requirements through effective rostering, ordering and stock control. Drive exceptional food safety and quality with a focus on allergen and dietary requirements Strong level knowledge and experience of operational and financial performance in the leisure sector Interact with stakeholders at the hotel and a broad support network The Person: Certificate 3 in Commercial Cookery. Experience in comparable role preferred. Comfortable with people management, development of the team, and maintaining training standards. High level knowledge in HACCP, allergen management and food safety.
