THE OPPORTUNITY Bimbadgen Estate PTY LTD is looking for an experienced and passionate Sous Chef to play a pivotal role in the delivery of outstanding food and wine experiences across the Estate's food and beverage operations.
Working closely with and supporting the Head Chef, the Sous Chef will: Support the Head Chef with daily operational planning, development, implementation and leadership of the kitchen to achieve budgeted revenue, labour, and financial targets through effective menu development, food cost control, limited wastage, and effective rostering.
Leading Kitchen services, including overseeing and managing food quality and consistency and working within any section as needed.
Partner with the Head Chef to continually develop the menu to achieve desired gross margins and customer satisfaction.
Assist the Head Chef with inventory management including ordering.
Assist the Head Chef in minimising food waste and establishing waste control measures.
Ensure stock rotation and the organised and hygienic storage of food.
Development of chefs and kitchen hands to increase skills and ability, including providing quality and ongoing training within the kitchen.
Ensure compliance in food safety and hygiene standards and be a key contact for any health-related inspections and audits.
This is a full-time position with Bimbadgen Estate Pty Limited & Caldisc Pty Limited offering a salary range of $ $80,000 to $85,000 (plus superannuation) depending on experience.
YOUR BACKGROUND To be successful in this role, you will have: Prior experience in similar role.
Certificate III in Commercial Cookery or equivalent experience A passion for food, wine and regional tourism A team player attitude, displayed in both internal kitchen teams and the greater business A high standard of personal presentation and standard of hygiene Enthusiasm, commitment, and seeking the opportunity to learn and develop professionally Due to the nature of the role, you will need to be available to work flexible hours including weekends and evenings.
