We are seeking a full-time Senior Sous and a part-time Sous Chef.
In these roles, you will bring extensive experience, motivation, and an absolute love for creating mouthwatering delicious food using the very best local seasonal produce. You should have a proven track record of managing high-volume service between 400 to 800 covers. Your focus will be leadership, with exceptional interpersonal skills. You'll be responsible for setting the tone for your kitchen team, providing training and mentorship while overseeing the smooth execution of service.
We Offer Salary $80,000- $90,000 plus superannuation About You As Senior Sous Chef , you will lead a skilled team, overseeing daily operations to ensure seamless service and exceptional guest experiences. You will manage all kitchen activities, take full responsibility for service execution, and report directly to the Executive Chef.
Assist the Executive Chef in creating seasonal, produce-driven menus Proven experience in a similar role as Senior Sous & Sous Chef essential Skilled in managing high volume service, handling 400 to 800 covers during peak times Strong leadership skills with the ability to maintain a calm, even temperament and work under pressure. A passionate, driven leader with expertise and motivation working closely with our Executive Chef. Champion of a positive kitchen culture, fostering creativity, calmness, and respect A culinary artist with a flair for menu planning and development, bringing innovative ideas to the table A commitment to delivering stunning dishes with exceptional taste A successful track record of leading teams to achieve consistent results Comprehensive knowledge of food safety, OH&S standards, and compliance Provide mentorship and guidance to kitchen staff during both service and non-service periods Resilience and ability to drive your team to perform in high-pressure service periods with an even temperament Strong interpersonal skills and proven ability to build effective relationships Excellent written and verbal communication skills Highly organised, self-motivated, and driven by a high-performing work ethic Your Responsibilities Assist in all sections of the kitchen when required during service Assist the Executive Chef with the management of the kitchen profit and loss Ensure the kitchen is ready & set up for service Lead and guide BOH team during shifts, ensuring quality and consistent output every time. Strong acumen in managing stock and labour costs, ensuring efficiency and profitability. Experience in understanding kitchen financials, wastage and ordering from local produce farmers and creating truly delicious dishes Full-time availability for Senior Sous. Willing and able to work a regular roster that includes weekends and public holidays. As Sous Chef , you will assist the Senior Sous to lead, motivate and mentor the team, ensuring smooth daily operations.

The hotel consists of 32 rooms of accommodation lovingly restored to its former glory, a public bar, dining areas, a private dining room, function areas, and a beautiful beer garden overlooking the upper reaches of the Yarra River.
