About the Role As Senior Cook, you will be responsible for the quality production of all meals and food services to the village as well as ensuring that the kitchen, service, and dining room facilities are cleaned and sanitised. This is a part-time position, 30 hours per week. Key Accountabilities Ensure the kitchen is appropriately stocked with produce required to provide a full catering service, including relief meals, that meets and exceeds the expectations of residents. Management of ordering, inventory, and stock control, ensuring timely stock receival in accordance with budgeting requirements. Ensure all produce is of a high quality and used to its full potential with wastage kept to a minimum. Management of kitchen budget in accordance with approved expenditure limits. Develop and maintain the Village Menu, Menu Standards, and food compliance documentation. Verify critical limits are maintained by temperature, monitoring all high products from time of receipt, during storage, at time of service, during service, and during the chilling process (when applicable). Ensure the quality and flavour of food and service is always maintained to the highest standard, with resident satisfaction the core focus. Act as the Community's nominated "Food Safety Supervisor," responsible for the implementation and management of Garden Villages Food Safety Program, made site-specific for each Community. Cleaning and Sanitation Clean and sanitise all areas of the kitchen, all kitchen equipment, crockery, and cutlery. Clean and sanitise all tables and chairs and any items kept on tables in the dining room. Sweep and mop all floor areas in the kitchen and dining room. Clean all internal areas of the community building including the restroom facilities. Technical Skills / Qualifications Knowledge of HACCP and an understanding of how it relates to the Food Safety Program. Food Safety Supervisor Accreditation. Food Safety Training Accreditation. Experience / Requirements Experience in cooking and serving buffet style meals. Basic understanding of budget/cost control. Excellent communication skills with residents and other staff/managers. Ability to take constructive feedback and to discuss issues/concerns in a positive, non-confrontational manner for the best outcome. Physical Requirements Frequent lifting when accepting deliveries, unpacking stock, cleaning and/or moving furniture. Operation and maintenance of kitchen equipment/cookers/dishwashers. Frequent use of muscular force, bending, twisting, and stretching when unpacking stock, cooking, and cleaning. Frequent walking and standing in the kitchen while cooking.
