THE ROLE: Reporting to the Finance Director, you'll:
Oversee all duties carried out by F&B control departmentAssist outlet head chefs in costing all dishes / menusEnsure all beverage selling prices are achieving correct GPsCost Cocktail menusWork with sommeliers to ensure optimal pricing on menusEnsure we are using the most economical supplierMaintain the POS back of house systemWork closely with managers to ensure all controls are adhered toCarry out Cellar audits and weekly cellar counts of all outletsAssist with supplier price comparisonsOversee beverage stock and cellar manager systemManage the Procure Wizard system – creating mini markets, adding products, managing usersAuthorise beverage orders on Procure WizardReconcile monthly statements F&B suppliersLiaise with supplier's accounts contactsUpdate revenue and spend figures on Flash Food documentsIdentify issues with dishes / produce and address with Exec ChefTrack food wastageOversee daily stock counts of high value food items.Oversee beverage procedures ie keylines, wastage, trainingLiaise with suppliers, building relationshipsWHO WE ARE LOOKING FOR: People who want to achieve great things – your interest in us suggests you have the ambition, drive and determination to meet challenges head on.People who are naturally friendly – who genuinely care about our guests and the service they receive.People who will always go beyond what our guests expect from us to make their stay a special and memorable one.People who show the same level of care for their team-mates as our guests – It's about supporting our colleagues to be the best they can be and to do the best job they can.People who will respect and protect the magical place we work in – it's up to all of us to look after our environment and never take it for granted.WHAT'S IN IT FOR YOU?
