One of Sydney's newest and exciting hospitality groups is looking for an experienced Head Pastry Chef to lead their ultra-high-end, luxury patisserie!The Role:Collaborate with the Executive Pastry Chef to design and implement seasonal menus that reflect the vision of the patisserie.Develop new seasonal offerings, incorporating innovative and trending concepts into our menu.Oversee the preparation, cooking, and presentation of dishes, ensuring they meet the highest quality standards.Lead, train, and mentor the kitchen team, ensuring mastery of pastry techniques and adherence to food safety regulations.Regularly conduct taste tests and quality checks to ensure consistency in flavor, presentation, and overall excellence.Manage day-to-day operations of the patisserie and production kitchen, including inventory control, ordering, and cost management.Uphold health and safety standards by ensuring the kitchen remains clean, organized, and compliant with hygiene regulations.Motivate and foster a positive working environment, training the team on proper storage, labeling, and stock rotation practices.Ensure all cool rooms and fridges are maintained, restocked, and tidied after service.Oversee the creation of signature items such as chocolates, retail goods, petit gâteaux, and tarts, ensuring meticulous attention to detail and top-tier quality.Candidate Profile:Background: Held previous senior pastry roles in premium restaurants, hatted restaurants, or Michelin-starred establishments would be highly advantageous.Creativity: A passion for culinary arts and a proven track record of innovative menu development.Leadership: Strong leadership skills with the ability to mentor and inspire.Standards of Excellence: Commitment to maintaining the highest kitchen, product, and service standards.Communication Skills: Excellent interpersonal and communication skills.Adaptability: Ability to thrive in a fast-paced and dynamic environment.Salary & Benefits:Salary banding up to $100,000 plus super and group discounts and benefits.
