Details of the offer

ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.
You will be based in regional NSW working on our remote mine site village.

14 days on 7 days off, salary of $110,000
Full time permanent employment
FIFO from Sydney / Drive In Drive out for locals

The Position:

Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employees.
Manage buffet style bulk cooking for Breakfast, Crib, Lunch, and/or Dinner and Desserts.
Ensure OH&S compliance, adhering to safe work practices and food handling procedures.
Ensure all catering controls are in place, and wastage is kept to a minimum.
Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards.
Manage catering team performance and employee development.
Enhance workplace culture – display high levels of customer service, contribute ideas & be flexible to meet the needs of the business.

The Person:

Cert III in Commercial Cookery Minimum.
Must be reliable, strong & capable of leading a team.
Demonstrated experience at a Head Chef level.
Experience within bulk catering environments.
Remote experience preferred.
Excellent knowledge of all kitchen procedures and operations.
Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client.
Experience with hygienic work practices and appropriate HACCP guidelines.
A proactive leader who is professional, positive, supportive, and motivated with experience in training, and developing a team of hospitality professionals.
