Head Chef role available at Hotel Lona in Frankston.THE VENUEOccupying Frankston's most beautiful and historic building, the no expense spared renovation has transformed the building into a stunning hospitality venue featuring a Restaurant, large Rooftop Beer Garden, Private Dining spaces and Public Bar, whilst honouring the features of the historical façade.The Lona concept features an upmarket but casual Gastro Pub style food, with an elevated restaurant experience in our ground floor dining room.THE KITCHENWorking from our new kitchen facilities, you will be responsible for the delivery of our menu and kitchen operations which has been designed for scalable fast paced service whilst not compromising on variety or quality.
The menu features a brunch offering, share plates, upmarket pub fare, pizzas, steaks, vegan dishes, desserts, kids offering and a variety of functions packages.The venue offers seasonal menu changes and weekly specials.Open from 12pm, with last orders mid week at 8:30pm and 10pm on weekends.ABOUT YOU:The Lona kitchen is a fast paced environment during peak service periods, the ideal candidate will have experience with pub environments and kitchen service systems to facilitate a high volume of customers in each peak sitting.
You will be a strong leader capable of developing a responsive kitchen team who produce high quality food and servicing a large menu offering.
You will have strong business administration skills enabling you to manage kitchen operations effectively and efficiently.
A team player who is able to foster strong relationships with your team and also with the front of house team.With the venue being only 2 years old, we are searching for a Head Chef who can continue to drive our goal to put Hotel Lona on the map for its food offering.KEY RESPONSIBILITIES:Overseeing all areas of kitchen operations to ensure successful delivery of a high quality consistent product to our full service dining room and bistro style Rooftop & Public Bar.Delivery and creation of weekly food specials.Delivery of weekly bulk cook staff meals.Hiring, management, training, mentoring & rostering of staff direct reports.Rostering and management of kitchen team.
Knowledge of Deputy highly regarded.Wage and operational cost management.Management of cost of goods versus sales.Ordering and stocktake to ensure 100% menu availability at all times.
