About Us
The Roe Australia is a premier sea urchin-themed restaurant, blending exceptional culinary experiences with environmental conservation. We focus on using the finest seasonal and sustainable seafood, particularly Australian sea urchins. We are seeking a talented and experienced Head Chef to lead our dynamic kitchen team and contribute to our unique culinary vision.

Key Responsibilities

-Lead and manage the kitchen team, ensuring high standards of food quality, presentation, and service.
-Innovate and develop new sea urchin-based dishes and seasonal menus in line with our sustainability goals.
-Manage kitchen operations, including inventory control, stock management, and cost efficiency.
-Ensure full compliance with food safety standards and maintain all necessary documentation for the food safety program.
-Oversee staff performance, providing mentorship and handling unsatisfactory performance with professionalism.
-Create and manage rosters, ensuring adequate staffing levels while controlling labour costs.
-Work closely with management to achieve restaurant objectives, including budget management for food and labour.
-Monitor and enforce OH&S (Occupational Health & Safety) standards and procedures.
-Foster strong communication between kitchen and front-of-house staff for a seamless dining experience.
-Build and maintain effective relationships within the team and with suppliers to ensure smooth operations.

Requirements
-Full Australian work rights are required for consideration.
-Demonstrated experience as a Head Chef or Sous Chef in a premium restaurant environment.
-Proven ability to lead and motivate teams, delivering high-quality outcomes.
-Strong experience in managing staff performance and handling challenging situations with professionalism.
-Passion for global cuisine trends and the ability to inspire creativity in the kitchen.
-Deep understanding of financial management, including food and labour costs, and budget control.
-Experience in managing food safety programs and ensuring compliance with all health and safety regulations.
-Hands-on experience in rostering and ordering to maintain efficient kitchen operations.
-Calm, composed demeanour with the ability to stay focused under pressure.
-Outstanding time management and organizational skills.
-Relevant qualification in Commercial Cookery or equivalent.
