About the role The heart of the Aurrum hospitality ethos, is to ensure the resident's genuine care and comfort through a high quality dining experience every day.
All cuisine served in Aurrum's dining rooms is prepared from scratch in our onsite state of the art kitchens using quality produce sourced fresh, locally and in season.
Aurrum's passionate chefs prepare a variety of dishes each day for the residents, using a range of healthy cooking techniques to ensure innovative, nutritious, and delicious menu selections delivering both the new and the classics to the dining table.
Reporting to the General Manager/ Executive Chef, you will lead a dynamic catering department that is instrumental to Aurrum's food focused culture.
You will be responsible for leading, mentoring and developing the catering team.
As the Head Chef you will: Oversee kitchen operations across breakfast, lunch and dinner service Conduct staff management with respect to rostering, attendance, training, development and performance needs Oversee special catering events and offer culinary instruction and/or demonstrate culinary techniques.
Undertake reporting and ensure kitchen meets all safety, regulatory and professional compliance standards Ensure proper equipment operation/maintenance; and ensure safety and sanitation in kitchen.
Ensure staff maintain a high standard of personal hygiene and comply with the procedures in the Food Safety Program.
Ensure regular cleaning of all areas is maintained by catering employees within the kitchen as per Schedule and Food Safety Program.
