POSITION: Head Chef
SALARY RANGE: $75,000 - $80,000
JOB BRIEF:
We are looking for an experienced and qualified Head Chef to organize the kitchen's activities.
The Head Chef will be the first in command in the kitchen.
He/she will streamline kitchen processes, oversee and organize the daily activities and inspect dishes before they arrive at the customers ensuring high quality and contentment.
JOB DESCRIPTION:
· Prepare and cook a variety of dishes according to our kitchen recipes and to cater for customer's dietary needs
· Cook and present dishes that are well-flavoured and appealing
· Adhere to food safety and sanitation guidelines to ensure a clean and hygienic work environment.
· Ability to work unsupervised and lead the team.
· Ability to plan function menus as per customer guidelines.
· Competent in Menu planning and cost control.
· Recruit, train and develop a team of professional kitchen staff to ensure excellence and consistency in the products delivered to customers
· Ensure that the brand standards on presentation and speed of service are maintained by all kitchen staff at all times
· Ensure that the BOH is clean and maintained to a high standard, including food storage areas, freezers and fridges
· Running stock control and managing all BOH food and wage costs, including practicing stock rotation and correct methods for product preservation
· Ensuring compliance with all health and safety regulations and food standards
· Ensure good cost control and profitability for Kitchen products and offerings
· Maximise the profitability of the Kitchen by ensuring portion control and qualities of preparation; minimising waste
· Ensure Kitchen ordering and purchases fall within the allocated Kitchen budget
· Ensure staff feedback is given to improve service and follow up any issues with the Operations Manager
· Plan and write the roster for the Kitchen team
· Creating new food items or improving current dishes to increase sales and exposure of the venue's food program
HEAD CHEF SKILLS & EXPERIENCE:
· Diploma or Advance Diploma in Hospitality Management or equivalent.
· Minimum 3-year work experience in a similar role.
· Extensive knowledge of cooking techniques and food handling procedures.
· Flexibility to work mornings, weekends, and holidays as required.
· Experience in developing new menus and food specials
· Supportive and strong team player.
· Strong leadership, organizational, and communication skills.
· The ability to work well under pressure
· A positive attitude and friendly demeanour
· Ability to develop strong positive relationships with suppliers and industry members
· Proven track record of strong food quality and produce control
· Proficiency in budgeting and cost control for both ingredients and labour
· Extensive knowledge of kitchen management, food safety, and sanitation regulations
