Bernardi's Marketplace are looking for an enthusiastic and motivated Food Preparation Manager to head up a project to design and create a new range of in-store ready meals to complement our current offerings.
OBJECTIVES
Design food prep area for most efficient production process
Design coolroom layout & apply labelling to define where stock goes
Purchase equipment: small appliances, utensils required to prep meals
Prepare each product on our new, in-store ready meals menu & conduct sampling sessions to adjust ingredients variants/quantities to optimise taste
Test our new food assembly sheets to prepare each product and adjust as required
Develop short training videos to complement food assembly sheets and work with HR team to upload onto our Learning Management system platform
Work with Operational team to create Audits, that will be used to audit the concept going forward, that focus on food safety, cleanliness, freshness of product, availability and minimising wastage
Create wastage tracking sheets
Display each product in various packaging options to select the most presentable option
Work with buyers to find the right balance of cost of goods, retail price & gross profit whilst ensuring the products taste great and delivering value for money to our customers
Create planograms to merchandise the stock into the different display units
Create stocktake and ordering process for ingredients within our replenishment system. Maintaining accurate inventory levels is critical
Train whole Food Preparation team from Manager through to permanent & casuals on workflow to prepare our meals fresh daily using the most efficient process. Ensure we are following best practice of rotation, cleanliness, coolroom and prep kept tidy etc.
Work with finance and buying team to develop initial budget for the department
Work with Marketing team to develop point of sales/ticketing to maximise the concept's in-store appeal
Work with our marketing team on first store launch to maximise exposure of the concept to our customer and competitor customer base
Post launch, monitor sales, wastage, gross profit and refine production sheets to optimise availability and minimise waste
Set up and ensure effective execution of in-store customer tastings for first 3 months of trade
Rostering of department in conjunction with Store Manager
Ensure the team are delivering outstanding, friendly and helpful customer service, helping remove barriers, creating moments that matter for our customers and highlighting the fresh products that we offer.
Maintain the highest standard of cleanliness and safety.
ONGOING RESPONSIBILITIES
Roll out concept to our other stores
Daily/weekly review of financial performance of department against budget. Make rapid adjustments to team, training and/or product selection to course correct to budget as required
Continually evolve product selection based on sales data, seasonal & market changes to keep it fresh and exciting for our customers
Conduct store audits on department & train/retrain our team as required
Work with HR to recruit and train new team members
Work with buyers on feedback for product supply
Work with Operations manager on department standards and Store Manager engagement
Conduct reviews and update food assembly sheets as necessary to continually optimise.
Ensure equipment is in good working order & maintained/replaced as required
EXPERIENCE REQUIRED
Catering experience for large scale efficient production
Food preparation
