We are looking for a talented and experienced leader who is seeking to continue their journey of culinary excellence and career development in a safe and reliable work environment.Encompassing a casual Wine Terrace, a 110-seat hatted restaurant (one chef's hat), and a 45-seat fine diner (two chef's hat / Relais & Châteaux), this role has oversight across all dining spaces and events.Key Responsibilities:Effectively leading the pastry team to develop multiple pastry and dessert offers across the estateOverseeing food production with a focus on quality and consistencyStock control and ensuring effective cost managementBuilding and maintaining positive relationships with suppliersEnsuring full compliance with food health and safety standardsEssential Skills and Experience:Proven expertise in baking, pastry, chocolate, and dessert creationStrong leadership skillsOperational acumen – roster, wage cost, training, and developmentAdaptable and collaborative approach with excellent communication skillsInnovative mindset with a commitment to excellenceUnderstanding of the latest trends in the industryMinimum Requirements:At least 3 years' professional experience in pastry, 2 in a senior capacityProven experience in leading a team in a high-end, fast-paced kitchen environmentDemonstrated expertise in both sweet and savory pastry and baking techniquesStrong knowledge of food safety and hygiene standards, particularly in a luxury kitchenExperience with menu development, food production, and cost managementHighly Desirable:International experience in luxury fine dining establishmentsExperience working at a Michelin star venueExperience overlooking multiple businesses within the same venueAdvanced pastry qualifications or certificationsDemonstrated experience in creating innovative and trendy dessert concepts focusing on local produceStrong social and emotional skillsExperience negotiating commercial relationships and supplier agreementsProficiency in stock control and managing purchasing processesIf you meet the above qualifications and are looking for an opportunity to grow your career in a premium environment, we encourage you to apply.Salary range up to $120K plus super and sponsorship available if required.
