About the Role VenuesWest is seeking to grow our kitchen team. Our catering operations include VenuesWest Cafés across our portfolio of venues as well as a range of functions and events from conferences and cocktail functions to large scale concerts and sporting events and food trucks.
We will utilise this recruitment process to establish a pool of Chefs that we will utilise to fill positions that become vacant over the next 12 months.
Currently we have 3 full time permanent positions available:
Executive Chef – Level 7 - $82,845 to $87,024 per annum + Commuted Overtime Allowance*. This position manages the kitchen operations ensuring excellent customer experiences, maximisation of efficiencies in key cost areas while maintaining financial returns and that all kitchen operations meet Health and Safety and Food Safety Regulations. The role oversees the team of 20-50 kitchen staff. The ideal candidate will have previous demonstrated experience in large scale catering operations (500 to 2000 pax) and in managing the operations of a high-volume kitchen including menu planning, purchasing and stock control and managing a team of staff. A strong leader with a history of success in corporate and retail catering with attention to detail while always remaining calm under pressure.  Sous Chef – Level 5 - $66,455 to $72,537 per annum + Commuted Overtime Allowance*. This role is responsible for managing the food production for our cafes, functions and events and assists in the planning and costing of menus, and controls procedures for portion control, stock control and storage. The role manages the kitchen operations in the absence of the Executive Chef. The ideal candidate will be a qualified Chef who has demonstrated experience in all facets of quality cooking and the day to day running of a kitchen. Whilst not essential previous experience catering for large scale functions of between 500 and 2000 people would be highly advantageous. Chef – Level 3 - $54,263 to $59,271 per annum. This position is responsible for food preparation, stock ordering and management, and overseeing the cooks and kitchenhands to ensure a high standard of food quality and hygiene practices is maintained.Successful candidates will possess a Chef trade qualification and have previous experience in all areas of quality cooking and day to day running of a kitchen including assisting with purchasing, stock control and the supervision of staff. Experience in the production of food for large scale (500-2000 people) functions and events is desirable. All three positions attract the following shift penalties and additional leave:
20% loading on rostered shifts commencing prior to 6am or finishing after 8:30pm or weekend shifts 30% loading on shifts finishing on or after midnight 1 week additional leave for employees working more than 12 Sundays per calendar year You will be required to work 152 hours per 4 weeks spread over varying days of a 7-day operation. Reasonable regular overtime to meet business needs will be required in addition to the base hours and overtime will be compensated.
Whilst the positions will be based at HBF Stadium in Mount Claremont and HBF Arena in Joondalup, mobility may be required between the portfolio of facilities.
*A Commuted Overtime Allowance is an annualised payment paid on a fortnightly basis in lieu of ad-hoc overtime payments in acknowledgement of the additional hours undertaken by these positions.
