Responsibilities include but are not limited to:
Menu development and concept marketing – you are the maestro of menu engineering, planning, and ensuring the offering is 'on trend' and 'on brand' You are connected – to team, to industry, to events, and to suppliers – staying up to date is your 'currency'. You know what our competitors are doing, what is in season, what keeping bringing guests back to our tables. Food production and presentation standards – you carefully balance the time taken to get everything right with the wait time, and you coach to ensure efficiency and presentation are maximised, with minimal wastage. Overseeing stock control and par levels ensures we are never caught short, or having to over-rotate stock., and stock-takes are a breeze. Working with the F&B and C&E team you ensure operations are smooth and communication between departments is clear. Food safety and hygiene are always top of mind. You ensure all the right checks and balances are in place, and all standards are being met and adhered to, and documented appropriately. You have an eye for the data – and sound financial acumen ensures menus are costed to maximise revenue, wastage controls are in place, and team are rostered to ensure coverage but maintain cost effectiveness. As a strong communicator you ensure your teams are briefed properly every day, kept up to date with forecasts and events, included in information sessions, and checked in with regularly to ensure they are interested, enjoying what they do, growing and supporting each other. You are an 'in amongst it' Exec Chef! You lead by example, working alongside the team, encouraging, coaching and developing up and coming culinary superstars! A true team player you support not only your team, but your colleagues and department heads on property. Where needed you also lend a hand to other TFE operations – we are all part of one family!
