ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. The Position: Our Chefs are employed to prepare, cook and serve quality food for our customers on our sites, catering for roughly 150-200 residents. We currently have one very rare opportunity for an experienced Head Chef to join our team at Zeehan Village, TAS.
DIDO - Must live in Tasmania 14 days on 7 days off - 10 hours per day Salary $87,500 Responsibilities: Work collaboratively with a team of Chefs, Kitchen Utilities, and Dining Room employees. Buffet style bulk cooking for Breakfast, Crib, Lunch, and/or Dinner and Desserts. Ensure OH&S compliance, adhering to safe work practices and food handling procedures. Ensure all catering controls are in place, and wastage is kept to a minimum. Maintain high standards of food hygiene, safety, infection control, and cleanliness in accordance with Compass standards. Managing catering team performance and employee development. The Person: Cert III in Commercial Cookery Minimum. Demonstrated experience at a Head Chef level. Experience within bulk catering environments. Excellent knowledge of all kitchen procedures and operations. Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client. Experience with hygienic work practices and appropriate HACCP guidelines. A proactive leader who is professional, positive, supportive, and motivated with experience in training and developing a team of hospitality professionals.
