We are seeking an experienced Head Chef , Sous Chef and Line Chef to lead our kitchen team at Dugald River Village.
Showcase your culinary skills in a dynamic remote mining environment while providing high-quality meals and on-site dining experience for residents.
This is a permanent Full-Time opportunity working a 2 weeks on/1 week off roster, either DIDO from local and surrounding areas or FIFO from Brisbane or Townville.
Head Chef: The Position Lead and manage the catering team, ensuring smooth and efficient kitchen and dining operations Deliver catering services and menu as per contractual commitments Develop and create diverse and nutritious menus in accordance that cater to various dietary requirements, including periodical menu planning and implementation Oversee food preparation, cooking, and presentation to maintain high standards of quality and hygiene Manage inventory, including ordering, stocking, and controlling food costs Train and mentor catering team members to foster a positive and productive work environment Ensure compliance with health and safety regulations, including food safety standards Work closely with village managers to meet client expectations and execute special events or themed meals Sous Chef: The Position: Assist the Head Chef in overseeing daily kitchen activities to ensure smooth service. Supervise food preparation, cooking, and presentation, ensuring consistency in quality and standards Lead and train kitchen staff during service, ensuring they adhere to best practices Manage kitchen inventory, assist with ordering, and reduce waste through efficient stock control. Collaborate with the Head Chef to develop and refine menu items. Ensure food safety and cleanliness standards are maintained at all times Line Chef: The Position: Prepare and cook a variety of dishes to meet menu specifications? Ensure food quality and presentation meet established Assist in the preparation of ingredients, including bulk food preparation Maintain cleanliness and organization of the kitchen and workstations? Follow food safety and hygiene regulations to ensure a safe working environment? Collaborate with other kitchen staff to ensure timely meal service? Support the Head Chef and Sous Chef in various kitchen operations? Purposeful and rewarding work with a competitive salary Employee Assistance Program for health and wellbeing Ongoing learning and development opportunities within our global organization Minimum Criteria: Ability to undertake regular travel to site on a DIDO/FIFO roster Ability to work in a remote and physically demanding environment Experience in bulk cooking, high-volume catering or remote village operations is preferred Proven experience as a Head Chef or Sous Chef, preferably in high-volume catering environment Ability to work to client expectations and adapt menus accordingly Strong leadership, communication, and interpersonal skills Exceptional culinary skills with a creative flair for menu development in a bulk cooking environment Ability to thrive in a fast-paced and dynamic environment A proactive and solutions-focused approach to ensure kitchen operations run smoothly Excellent communication and interpersonal skills Strong knowledge and application of food safety and hygiene regulations Certificate III in Commercial Cookery (essential) Safe Food Handling Certificate (desired) Physically fit with the ability to successfully pass pre-employment medical requirements To apply for this role please click on the 'apply' link and complete the online application.
