Job Responsibility:
Cloncurry Roadhouse is in urgent need of a Chef to join its busy restaurant.
You will take on the running of designated sections as required within our kitchen (breakfast, lunch and or dinner).
Your responsibilities will include the management/overseeing and running of your kitchen section/s and services, including the planning of our menus (seasonal and specials), organising, and preparing per the decided menus.
Tasks:

As chef, you will be assigned within the breakfast, lunch or dinner service shifts of the restaurant over the course of your tenure.
Within this, your tasks will include:

• Changing seasonally or as required the designing and planning of the regular/dine in menu, including any daily specials on menus.
You will be across providing management with the ingredients/food costings for each of the menu items and specials.
• Reviewing, advising and providing management on kitchen shift/labour requirements particularly during various events and festivals.
• Place stock orders in conjunction with the stock rotation of dry, cold, frozen goods and fresh produce.
• Introduce and communicate with management, section team, kitchen back of house on the dishes prepared including providing advice to staff on ingredients, potential allergens and preparation methods used to produce dishes on menu (regular, daily and seasonal dishes).
• Coach, train, monitor/oversee section (kitchen staff) on workplace health and safety and hygiene procedures per regulations.
• Introduce and train kitchen staff particularly new kitchen staff on cooking methods used to prepare the various dishes on the menu including specials, (new and seasonal dishes).
• Prepare, cook and oversee cooking of food during service and preparation shifts and be responsible for the dishes leaving the kitchen.
Ensure food plated by kitchen staff is presented, plated and served to customers per the required/set standards, ensuring all customer requests, dietary needs and hygiene procedures are met and followed.
• Attend pre-service and post service meetings with front of house, back of house (kitchen) and management staff to discuss, review and troubleshoot aspects of restaurant service.
• Sit in on kitchen staff interviews with management as required.
Qualifications:
AQF Certificate IV or Diploma
Two years of experience in a related field
Salary:
$73,000 - $75,000 + Superannuation
Job Type: Full-time
38 hours per week
