Madison Tower Mill Hotel Brisbane is looking for experienced staff in the following department:
Kitchen – Chef De Partie
Please note: All necessary training will be provided.

As a successful candidate you will have:
• Previous experience required (minimum 3 years in a similar role)
• Cleans food preparation areas as determined by law and company policy
• Prepares foods to the specifications of the guest/customer and the company
• Prepares food before the arrival of guests
• Adjusts food items to accommodate guests/customers with allergies or specific diet concerns
• Oversees other employees in the kitchen
• Acts as liaison to front-of-house employees to ensure proper food service
• Seasons food according to recipes or company needs
• Operates various kitchen appliances such as a blender, oven or grill
• Portions, arranges, and garnishes food based on guest/customer preference
• Assists other cooks during the food assembly process
• Estimates expected food consumption and organised preparation
• Cleans up after business hours
• Communicates with manager about how to improve meal service
• Alters dishes based on consumer suggestions or requirements
• Complete required checklists for cleaning, hygiene, temperature control, transportation of food etc.
• Orders and manages stock levels
• Maintains equipment by conducting regular organisation checks, and defrost cycles of cool room and freezers
• Assists with menu curation for both day-to-day of restaurant and specialty menus for functions/events
• Suggests specials based on stock levels and curates recipe cards to provide to management for approval
• Report directly to management about staff progress/issues, advise on equipment required or services to be rendered
• Have the capacity to oversee and run kitchen operations on a day-to-day restaurant basis, and also for functions/events
