Job Description Responsible for checking all meat and fish on delivery for quality and quantity.In charge of cleanliness of the meat and fish preparation rooms and proper storage of all meat and fish items in the freezers and fridges.The butcher must be fully aware of the company controlling and food preparation procedures e.g., portion control, as outlined in the F&B manual.Properly measures and portions all food items.
Complies with all portion sizes, quality standards, department rules, policies, and procedures.Assist the Head Chef with menu preparation and ensure adequate supplies are available for expected service.Planning, preparation, and execution of high-quality food offerings for various conferences and events.Supervision of the kitchen in the absence of the Head/Sous Chef.Maintain excellent presentation standards and cost control for all food and beverage outlets while maintaining recipe standards.Ensure strict stock rotation and minimum wastage.
Have stock control procedures implemented and maintained.Keep all working areas clean and tidy, ensuring all equipment is maintained, serviced, and cleaned to WHS standards. Qualifications Proven experience in a cold kitchen role.A culinary degree or relevant certification is a plus.Strong knowledge of food safety, hygiene, and cleanliness standards.Ability to prepare recipes and manage market orders using the FutureLog system.Ability to work under pressure and in a fast-paced environment.Attention to detail and a passion for creativity in food presentation.A team player with excellent communication skills.
