Skyfeast offers a premium buffet dining experience for guests - serving contemporary Australian cuisine with an international flair.
There are over 30 international dishes on offer with various stations including seafood, antipasto, sushi, roasts, Mediterranean and desserts.
We are currently seeking a Senior Sous Chef to join the busy production kitchen brigade.
This will be a hands-on role based on a 7-day rotating roster.
This senior role will see you leading the kitchen team in Head Chef's absence, so is suitable for a senior chef looking to step up in a renowned venue.
The role encompasses Cooking and preparation of dishesTeam management - hiring, training and developingRoster and timesheet managementMenu planningEnsuring compliance in regards to WHS, food safety, employment lawsManaging food orders and inventoryYouTo be successful in this role, you must have:
A minimum of 2 years' experience as a Sous Chef or in a culinary leadership roleExperience in a high-volume à la carte restaurant, buffet, or hotel with similar standards focused on quality food productionPositive leadership skills with the ability to lead by exampleInterest in menu development for an international cuisine buffetBasic computer skills including Word, Excel, and emailSound knowledge of OH&S, HACCP, par levels, stock control, ordering, and stock takingA desire to learn and develop under experienced chefs within the Trippas White GroupClear and precise communication skills, both written and oralImmaculate grooming and a good standard of personal hygieneA strong understanding of food and labour cost controlsMotivated with the ability to make decisions under pressure within a fully operational kitchenFlexible availability for a 7-day rotating roster, including lunch and dinner shiftsTrippas White Group is committed to achieving a diverse workforce and strongly encourages applications from Aboriginal and Torres Strait Islander people.
