Job description:

Ensure all preparatory tasks are completed before kitchen operations begin.
Wash and chop ingredients, sanitise workstations, and set up necessary equipment.
Design and prepare meals using seasonal or trending ingredients.
Create and pair menu items, planning courses, and ensuring that the menu reflects contemporary culinary trends and standards.
Inspect dishes prior to delivery to maintain presentation and quality standards.
Make necessary adjustments, such as cleaning plate edges and adding garnishes, to maintain high presentation standards.
Coordinate with local and international suppliers to source high-quality ingredients and placing orders.
Manage daily kitchen inventory, monitoring ingredient levels, and ensuring the kitchen is fully stocked.
Assess and record ingredient levels, including produce, meat, seasonings, oil, and butter.
Oversee the hiring and training of kitchen staff, providing instruction on culinary techniques, and onboarding new employees.
Conduct interviews, provide instruction on fundamental culinary techniques, and orient new staff members on kitchen layout and operational procedures.
Manage food, staffing, and overhead costs by optimising ingredient usage, minimising waste, and adjusting pricing in line with budgetary goals.
Ensure smooth operations by maintaining strong communication between the Front of House and Back of House teams.
Lead catering meetings and other necessary gatherings as required.
Contribute to daily operational reports by maintaining a comprehensive daily logbook for all kitchen activities.
Maintain a safe, clean, and compliant kitchen environment, adhering to food safety regulations, and managing regular cleaning and maintenance of kitchen facilities.

Qualifications/Attributes:

Must hold Certificate IV in Commercial Cookery, or at least 3 years of relevant work experience in lieu of the qualification.
Must possess at least a minimum of 3 years of relevant work experience.
Have outstanding communication and leadership skills.
Must have the willingness to collaborate with other colleagues.
Must be obsessed with cooking, including unique and emerging trends.
Must have organisational skills.
Ability to adapt and work in a fast-paced environment.

Salary Range: $70,000 - $80,000 p.a. excluding superannuation.
Job Type: Full-time
Pay: $70,000.00 – $80,000.00 per year
