Randstad have permanent opportunities available for an experienced Chef to support one of our defence client sites in remote locations such as Alice Springs. This is a rostered position 15 days on 13 days off with all flights and accommodation provided. You will be providing services to on site services teams organising and providing meals to on-site teams. The Chef is primarily responsible for preparing, cooking and serving nourishing and attractive in-house meals for staff within the facilities and maintenance contract. The Chef is also responsible for ensuring that the safety and hygiene of kitchen equipment is maintained and adhered to within legislative and Workplace Health & Safety requirements.This is a permanent, salaried position available to start asap. FIFO from Adelaide or Darwin.You will have all the benefits of working in a permanent salaried position on a fantastic roster!!Key responsibilities will include:Ensure all food is prepared as per food preparation requirementsEnsure meals are produced on time, and sufficient quantities are available for the various areasDelegate duties to General Hands as requiredEnsure wastage is minimised by careful management of menus and food preparation practicesEnsure proper hygienic storage methods are utilised to prevent food lossEnsure the security of all alcoholic and non-alcoholic drink stocksUndertake ordering and control of all kitchen related stock levelsTo interact and discuss any special dietary requirements with site based staffTake responsibility for meticulous personal hygieneComply with Infection Control guidelinesPlan menu offerings in order to ensure variety and qualityRespond positively to special occasion requests e.g. birthday cakesEnsure all aspects of the kitchen are thoroughly cleaned before and after food preparationCold chain food supplyVerify that all produce has been stored and transported correctlyPerform checks of produce as it is unloaded to confirm correct temperatureEnsure all produce is unloaded and stored in the freezers or fridges in a determined timeframe to ensure temperature control is maintainedCore temperature checks of frozen and fresh items are performed throughout the day as part of policy and procedure.Foster and maintain positive working relationships with clients, client sub-contractors, suppliers and consultants.Regularly evaluate objectives and plans to ensure continual improvement, and alignment withchanging project and client priorities.Key Requirements:Certificate IV in Hospitality (Commercial Cookery) including Food Safe qualifications for the relevant State or TerritoryResponsible Service of Alcohol (RSA) CertificateDemonstrated ability to maintain a high standard in preparation, ordering, storage and food handling.Demonstrated ability to organise and work within a kitchen teamDemonstrated ability to plan and manage food service budgetKnowledge and experience in menu planning for dietary and nutritional requirementsExperience working in similar environments or similar organisationsWorking knowledge of legislative requirements including Workplace Health & Safety and Food Safety Standards.Previous / recent experience in cooking at site facilities and within commercial kitchensCurrent National Police Check or willingness to undertakeTo be considered for this position you must be an Australian Citizen and eligible to obtain and maintain a current Australian Defence Security Clearance.experience5 yearsskillsHead chef, chef, FIFOqualificationsCertificate IV in Hospitality (Commercial Cookery) including Food Safe qualifications for the relevant State or TerritoryResponsible Service of Alcohol (RSA) CertificateCurrent National Police CheckeducationVocational/Professional Qualification
