Location: Haberfield, NSW 2045 Position: Full time Salary: $70,000-$90,000 per annum (depending upon skills and experience) Your key responsibilities will be but not limited to: Prepare high-quality baked cakes, sweets, gelatos and pastries that deliver exceptional taste by weighing, sifting, kneading, cutting, moulding and baking them properly. Consistently produce high-quality baked goods especially cannoli, ricotta cakes, biscuits, by adhering to established recipes and methods of Pasticceria Papa. Ensuring sufficient raw materials and ingredients are available at all times through forecasting daily demand and effective inventory management. Maintain the quality, presentation and freshness of the baked products to ensure they meet Pasticceria Papa's standards. Decorate, glaze and fill cakes, pastries and other dessert items with appropriate toppings to enhance the visual appeal for the customers. Clean and check all equipment and workstation, during and after preparation of the baked goods for hygiene and safety adherence. Store all ingredients and condiments in appropriate containers, label and name them correctly with details abiding by food regulation standards. Work closely and liaise with supervisor, other kitchen staff and communicate effectively to coordinate daily production schedules. Check the cool room and its temperature, ensuring all stocks are covered and labelled properly showing "expiry dates/best buy labels." Skilfully manage time and prioritize tasks to consistently meet production deadlines during peak hours and festive occasions. Act as a mentor for apprentices and kitchen hands, guide them and monitor their work. Participate in regular training sessions and staff meetings to diligently understand and execute all duties cost effectively. Follow health and safety regulations related to ingredient, equipment and food handling. Occasionally interact with customers to provide product information and accommodate special requests. Abide and comply with Pasticceria Papa's Quality Standards in all workplace activities. Qualifications and Experience Requirements: Certificate III in Hospitality or Certificate IV in hospitality or equivalent related field. In the absence of formal qualifications, significant commercial experience working as a pastry cook may substitute. At least two years of experience in Australia as Pastry cook/chef. Skills: Knowledge and love of baking sweets, cakes etc. Attention to detail. Precision in presentation and quality control. Good communication skills. Strong collaboration skills. Energetic and hard working. Must be very personable and a good team player. Ability to learn and adapt quickly to new situations. Understanding of food safety and sanitation practices.
