Job Title: Head Chef
Salary: $76,000 plus 11.5% superannuation per annum
Location: Shop 1/114 Sharp St, Cooma NSW 2630
We are seeking a skilled chef to oversee the culinary experience at Mezcal Pty Ltd. The ideal candidate will have a passion for authentic Mexican cuisine and the ability to lead a team in a fast-paced environment.
Responsibilities: Design and update menus that showcase fresh, locally sourced vegetables and imported Mexican ingredients.Work closely with management to incorporate feedback and keep the menu aligned with guest preferences and seasonal ingredient availability.Prepare and cook authentic Mexican dishes to order, ensuring high standards for flavour, quality, and authenticity.Oversight of daily kitchen operations, efficiency, and adherence to food quality and presentation standards.Recruit, train, and supervise kitchen staff, fostering a collaborative work environment.Manage inventory levels, order supplies, and control food costs to meet financial targets.Maintain strict hygiene and safety standards, ensuring compliance with health regulations.Qualifications and Requirements: Certificate IV in Commercial Cookery or Diploma of Hospitality Management (preferred but not mandatory).At least 2 years' experience as a Chef or Sous Chef, with a focus on Mexican cuisine or a strong understanding of Mexican culinary traditions.Strong leadership and communication skills, with the ability to manage a team and maintain a positive work environment.Knowledge of food safety standards and commitment to maintaining a clean, organized, and safe kitchen.Experience with inventory management, food cost control, and budget management.
