The Surf Club Mooloolaba, one of Australia's oldest Surf Clubs, has been a strong operator providing great food to members and guests for many years. Operating two food outlets on separate levels of the clubhouse, the Bayview Restaurant and Boathouse Restaurant have a combined gross sales of $6m per annum.Due to an internal promotion, a role has opened up for a Head Chef to lead both kitchen brigades, ensuring recipes are followed, preparation is correct, portion controls, workload is acceptable, food standards and teamwork are of a high standard.Reporting to the Executive Chef, the Head Chef will utilise their commitment to quality, diversity, and imagination, ensuring the club attracts new emerging markets whilst catering for its current loyal customers. The successful candidate is required to be firm yet fair, handle the pressure associated with high volume, build a group of team players, and not accept second best in staff or food.To secure this position, the suitable candidate will possess the following:This is a hands-on position, when required to help the team out.Significant experience in fast-paced club or pub catering operations.In-depth understanding of kitchen costings and knowledge of accounting practices.A passion for ever-changing menus and specials showcasing your team's talent.A proven track record in achieving catering budgets.A commitment to implementing and managing high standards.Willing to work up to 45 hours per week including weekends, some nights, and Public Holidays.Salary up to $120,000 (+ superannuation) under the Registered and Licensed Clubs Award 2020.
