Job Summary
Control and direct the food preparation process and any other relative activities
Construct menus with new or existing culinary creations ensuring the variety and quality of the servings
Approve and “polish” dishes before they reach the customer
Plan orders of equipment or ingredients according to identified shortages
Have experience in cooking pizzas in a wood-fired pizza oven
Have experience in preparing pizza dough
Arrange for repairs when necessary
Remedy any problems or defects
Be fully in charge of hiring, managing and training kitchen staff
Oversee the work of subordinates
Estimate the staff’s workload and compensations
Maintain records of payroll and attendance
Comply with nutrition and sanitation regulations and safety standards
Foster a climate of cooperation and respect between co-coworkers
Required Experience, Skills and Qualifications
A Diploma in a relevant field, plus 2 years of full-time post qualification experience; or
At least three years of experience as a chef.
Proven experience as head chef
Exceptional proven ability of kitchen management
Ability in dividing responsibilities and monitoring progress
Outstanding communication and leadership skills
Up-to-date with culinary trends and optimized kitchen processes
Good understanding of useful computer programs (MS Office, restaurant management software, POS)
Credentials in health and safety training
Degree in Culinary science or related certificate

We are looking for an experienced and qualified Head Chef to organize the kitchen’s activities. You will be the first in command in the facilities and will create and inspect dishes before they arrive at the customers ensuring high quality and contentment.

Trattoria Basiloco is an amazing Italian restaurant in the heart of beautiful Byron Bay.
We open only for dinner from 5.30 pm.
We serve traditional Italian dishes using local produce, in an atmosphere cool and relaxed.
We need a dynamic and self-motivated person. In high season we serve 150 person/night in a couple of hours service, so it is important to have a person able to be very organized and prepared for every night service.
The good side of the job is that offers free time and a good lifestyle, with a very good salary ranging from $54,600 to $60,000 plus superannuation depending on the applicant's skills.
