Details of the offer

We are looking for a chef who will assist the pub's busy kitchen by managing and assisting other members of the food preparation team, designing seasonal menus, and adjusting orders to meet guests' requests, as well as other tasks detailed below. The goal is to continue to position Caribou as a quality pub and provide a memorable experience through great food and excellent customer service.
Roles and Responsibilities
Main Tasks:
To monitor and maintain consistent food standards and quality across all areas and during all stages of production and supply.
To ensure quality control measures and hygiene systems are always achieved.
To have total accountability for the day to day running of the kitchen service
To actively participate in the ongoing management and development of menus and ensure menus are costed accurately.
Ensure all food is prepared as per food preparation requirements
Ensure meals are produced on time, and sufficient quantities are available for the various areas
Be available for functions as they arise to ensure that the food is prepared and served as required
Inspect supplies, equipment, and work areas for cleanliness and functionality
Working as a team, assist the Bar Manager as required.
Oversee and supervise all kitchen staff
Teach new staff skills they require to perform their roles to the required standard
Oversee and monitor the work of kitchen staff to ensure all tasks are done as required
Give staff feedback on their performance to enable staff development
Manage kitchen stocks
Ensure wastage is minimized by careful supervision of food preparation methods
Ensure proper hygienic storage methods are utilized to prevent food loss
Check freshness of food and ingredients
Quality
Overall responsibility for the delivery of quality food throughout Caribou
Ensure strict compliance to company procedures and requirements.
Safety and Environment
Ensure staff are always aware of and follow safe work practices
Assist other staff in the cleaning of the kitchen at the end of the shift
Responsibility for all kitchen safety
Ensure strict compliance to company procedures and requirements including ACT Health requirements
Development and continuous actions of project Safety Management Plan and Program (including the completion of all required plant, risk registers, objective’s/targets, work method statements, emergency response procedures, handbook, etc.)
Safety and Environmental reporting as required
Human Resources
Ensure satisfactory human relations management is in place and aligned to company procedures
Salary: AUD 50,000 - AUD 55,000 per year
